Egyptian/Lebanese Okra (Bamia) Vegan/Vegetarian

Ingredients
400 gms Okra
500 mls Vegetable Stock
350 mls Passata
1 Medium Onion (finely chopped)
2 Garlic Cloves (crushed)
1 Lemon (juiced)
2 tbs Olive Oil
The Spices
2 Bay Leaves
2 tsp Ground Cumin
2 tsp Ground Corriander
1/2 tsp Cayenne Powder
1 dried Chili
Steps
Saute Onion and Garlic (Approx 10mins)

Add Spices and fry until fragrant (Approx 2mins)


Add Okra and stir (Approx 2mins)

Add passata and vegetable stock and bring to boil. Turn heat down, cover and simmer for approx 20mins

Add lemon juice, stir and serve
